Mycotoxins and molds and their impact on human and animal health were the leading theme of the 13th International Scientific Conference, organized by the Department of Physiology and Toxicology at Kazimierz Wielki University in Bydgoszcz. The conference was held from June 29 to July 1 this year.
Mycotoxins are silent killers that cannot be seen by the naked eye, but are found in almost every home - in the mold-infested foods we unknowingly eat, such as bread, other cereals, flour, vegetables and fruits.
Mycotoxins are carcinogenic and are on the red list of poisonous substances," pointed out Prof. Jan Grajewski, founder of the Department of Physiology and Toxicology at the University of Bydgoszcz. Interestingly, ants in this case seem smarter than humans, as they will not eat or carry anything moldy to their nest.
"I'm glad to participate in this event and learn from scientists like Prof. Jan Grajewski, who have the passion, dedication and perseverance to discover these substances dangerous to humans and animals. I admire his 45 years of determination and hope that this work will not be in vain. I believe that thanks to the cooperation of startups like BIOmesh, the scientific community and business, we will be able to create a solution to take on the effective fight against mycotoxins." - said Cezary Kępczynski, project leader and originator of the BIOmesh platform for monitoring the risk of mycotoxins and mold in stored food.
The conference featured a number of interesting presentations, including one by Prof. Dr. Piotr Jedziniak of the National Veterinary Institute PIWet titled "Biomonitoring of mycotoxins in animals - a tool for scientists or farmers?".
The conference received funding under the program "Social Responsibility of Science/Excellent Science.
